Food Truck Fiesta at Farragut Square in D.C.

There were 11 food trucks today at Farragut Square, including Sauca (my favorite), as well as DC Slices, Sol Mexican Grill and Austin Grill among others.  The website/blog Food Truck Fiesta has all of the details and daily maps of foot truck locations based on Twitter feeds.

Is the food pre-packaged and just sold out of the foodtruck or is any unwrapped food handling taking place at the point of sale? Also, how many people are on each food truck?

Walt: They prepare the food as it gets ordered, usually about 2-3 people per truck.

Note to self - no snide remarks about Federal government employees avoiding nutritious food served in government cafeterias.

Two or three people sounds like enough help for a sanitary operation. I grew up with a mother who was in the catering business, and her partner had a commercial kitchen. My first job was as a cook which led to being the manager.

What you don't know might not kill you, but it will make you very sick. Sometimes it is more fun if you don't know what's in something, how it was prepared, or how big of a fire trap you eating it in.
